Chinese steaming basket is suitable for those who want to enjoy steam cooking. We stock them in various sizes from small to large baskets.
Japanese steaming basket
Japanese steaming basket has stronger sealing power and depth compared to the Chinese steaming basket, and is recommended for steaming rice for Mochi (sticky rice).

Ohitsu
Ohitsu is a traditional cooking tool to store cooked rice.
Ohitsu available at KAMA-ASA is made of Sawara (type of cypress) from Kiso in Nagano prefecture.
Ohitsu helps absorb moisture released from the rice so it will still taste good after it cools down.

Handai
Handai is used as container when making Sushi rice by mixing cooked rice and vinegar.
This can be used instead of Ohitsu when combined with a separately sold lid.

Steak knife
KAMA-ASA's original steak knife.
Steak knife is, in a manner, a tool with which you complete the dish. The steak you eat with a sharp-edged knife should be served at its best. Our steak knife is made along the same procedure as our kitchen knives, so sharpness is guaranteed. We also have services to sharpen your knife.

Ginko nuts roaster
This product is intended for roasting Ginko nuts, though it is also suitable for roasting other kinds of nuts or coffee beans.

Mesh skimmer
Mesh skimmer is used for removing little balls of batter left after frying.
The mesh part is firmly welded making it easy to wash without worrying about scratching.
This is also useful for skimming off foams or scooping boiled ingredients.

Bamboo colander
The bamboo from this colander is from Sado island in Niigata prefecture.
This can be used for multiple purposes such as placing noodles and drying vegetables.

This traditional mortar is made at Yamase Seitousho.
The mortar is made sturdy and will not chip easily as it has been fired in high ignition while the inner glaze prevents the spreading of odor.
For pestles, we have a variety of them including the one made of Japanese pepper tree from Wakayama prefecture.

Dried Bonito slicer
Dried Bonito is an indispensable ingredient for making Dashi (soup stock) for Japanese food. The freshly sliced Dried Bonito is incomparably delicious. We stock these slicers in a small size for the table, and in a larger size for slicing a large quantity.

Stainless tray is indispensable for food preparation.
They are available in many sizes and depths. Mesh rack to drain oil and lid is also available for combined use.

Scales can be removed using a regular knife. However, using this specific tool can helps remove scales quickly and entirely. It is available in brass and stainless.

This is a tool to open clams, and is alternatively called the Oyster knife.
Made of stainless steel, Clam opener is available in various types each catered for specific type of clam including common orient clam, oyster, scallop, etc. It is not suitable for cutting meat.

Shuro Tawashi has body yet it is soft enough to avoid scratching. This can be used for various cooking tools.
Kishu Shuro Tawashi

This Tawashi is made of Shuro (palm) from Kishu area (Wakayama prefecture) of Japan.
Compared to regular Tawashi, this has a smoother touch and can be used not only for dishes and vegetables, but also for the body. Packaged in a box, Kishu Shuro Tawashi is recommended as a gift as well.

Shuro Tawashi is made of imported palm, but made in Wakayama prefecture.
They are available in various shapes, and should be picked according to your needs.

Whetstone
Any sharp knife eventually gets dull, but its sharpness reappears once it is sharpened on a whetstone.
There are 3 basic types and each has different grits, which can be chosen according to the purpose of use.
Rough stone
Rough stone is a whetstone with rough grain size. It is used for fixing a chipped knife or an extremely dull knife.
Medium stone
Medium stone is a whetstone to restore sharpness. It is recommended for daily whetting.
Finishing stone
Finishing stone is a whetstone with fine grain size. When sharpening with a finishing stone, a knife's sharpness is improved with a longer lasting effect.
Knives sharpened in this way can give food a very clean cut without crushing the fibers of the ingredient.
Fixing stone
Whetstone also needs proper maintenance. After sharpening several knives, the center of whetstone is gradually worn out. The worn whetstone cannot sharpen properly, so please smooth out the stone with a stone fixer.
